Orange Slices in Cassis
Ingredients:
8 medium-size navel oranges
3/4 cup fresh orange juice
4 tablespoons cassis
1 tablespoon fresh lemon juice
Preparation:
Remve the surface of the 3 of the orange skins in long, very thin strips. There should be about 1/2 cup. Place the peel in a pan with cool water. Bring it to a boil and drain it immediately. Set aside.
Cut away the top and bottom of each orange. With the point of a sharp knife, remove the skin of all the oranges and all of the white membranes on the surface.
Remove each segment of orange without any of the membrane. Take the knife and slice down on each side of each segment to free it from the membrane.
Place the segments in a bowl along with the other ingredients. Toss gently. Cover the bowl tightly and refrigerate for 2 hours before serving.
Serves six.
